What do you like the most about your occupation? It gives me the opportunity to meet new people and do something I enjoy.

Things you still want to accomplish: This could be a very long list, but to see my children grow up and be successful is defiantly at the top. I would also one day like to open up a Cajun restaurant. It’s always been a dream of mine and one day I hope that it will come true.

Astroginininini was also so kind to share 2 of her favorite recipes with us, the 1st is one of her own and the 2nd is one of her Favorite Pampered Chef Recipes:
Chicken Corn Soup
In a large stock pot, add 1 package of skinless boneless chicken breast (about 5-6) and fill with canned chicken broth until about 1 inch from the top. Add a good bit of salt, pepper, garlic powder, parsley, and about 1.5 cups chopped onions. Turn that on a medium heat, and boil for about two hours. Then turn down heat, remove chicken and shred. Return the chicken to the pot. Add 3 cans white shoepeg corn, 2 cans whole kernel yellow corn (both with juices). After that, taste and re-season and simmer for about 1 hour. You’ll want it to taste sort of over-seasoned because the potatoes will absorb some of that flavor. You’ll cube approximately 5 small potatoes and add to the soup. Add 4-5 boiled and diced eggs to the soup at the same time with the potatoes. Bring to a boil for about 15 minutes, then simmer until the potatoes are tender. Taste for seasoning. If your stock looks like it’s cooking down too much, just add more stock but remember to leave room for the potatoes and the eggs.
"Touchdown Taco Dip" by The Pampered Chef
2 cans (16 ounces) refried beans
1 package (8 ounces) cream cheese, softened
1 cup sour cream
2 tablespoons Pantry Southwestern Seasoning Mix
2 garlic cloves, finely minced
4 ounces cheddar cheese, shredded (1 cup)
1/2 cup pitted ripe olives, sliced
1 medium Roma tomato, seeded and chopped
1/4 cup thinly sliced green onions with tops
2 tablespoons fresh cilantro or parsley, snipped
1. Preheat oven to 350°F. Spread refried beans over bottom of Deep Dish Baker using Classic Scraper. In Classic Batter Bowl, combine cream cheese, sour cream and taco seasoning mix. Finely chop garlic using Utility Knife; add to batter bowl and mix well.
2. Spread cream cheese mixture evenly over beans. Grate cheese over top using Deluxe Cheese Grater. Bake 15-18 minutes or until hot.
3. To prepare toppings, slice olives using Egg Slicer Plus®. Dice tomato and thinly slice onions using utility knife. Thinly slice cilantro using Pizza Cutter. Sprinkle olives, tomato, onions and cilantro over dip. Garnish with additional sour cream, if desired. Serve with tortilla chips.
**Pampered Chef Southwest Seasoning can be substituted for Taco Seasoning
I havent tried them yet but they sound delicious, let me know if you tried it and what you think about it!

1. You have reserved the entire evening to play in tonight's RB Ranking Freeroll and are determined to make the final table this time. However, only five or six hands into the game, the UTG player to your right (who has folded every hand so far) goes all-in. You are the early chip leader, but will have only 100 chips left if you call his all-in bet. Do you call or fold?
2. What will you name your Cajun restaurant and what menu items will be found under the headings; Appetizers, Entrees, Sides and Desserts?

To Dragul: It's a white corn. I know that Green Giant makes it. And it comes in a smaller can. They also have it in a mix with the sweet corn. Here's a picture that might help:

First of all, what's my cards? Depending on that more than likely I would fold, but not because I've set aside the entire evening, but because I put them on a very decent hand, so unless I have an extremly great hand I'm letting it go.
2. What will you name your Cajun restaurant and what menu items will be found under the headings; Appetizers, Entrees, Sides and Desserts?
I'm not sure of a name yet. I have thought of so many names, but "the one" hasn't appeared yet.
As far as the menu it will be anything from your traditional cajun type foods such as Gumbo, Etouffee, boiled and fried seafood (depending on it's location as fresh as I can get and keep the prices low... even if I have to hire someone to make the drive), to the classics of meatloaf, beef pot roast, burgers, etc. Hungry yet?
...and if you decide to take suggestions for the name, I would like to suggest "Cochon de Lait"
