If your playing on pokerstars.net and are talking about the gold color star, it means those players have accounts on pokerstars.com and play for money. If your talking about the red one toward the bottom of the icon, pass your mouse over it, basically means they play a lot and have some type of status on the site. Something with how they place, how often they play ... stuff like that.
